Christmas Cake

I have started the Christmas Cake making process today. I am making three this year, one for my fiance who doesn't like marzipan (yes, strange I know!!), one for my mother-in-law, and one for my mum. I love making Christmas Cake - but I don't enjoy eating it. I love the smell and it is definitey the start of Christmas for me so...

I currently have 500g of Currants, and 200g each of Sultana's and Raisins soaking in 5 tablespoons of Brandy (though this doesn't look enough to me, so I'll probably add another one or two later!) and this will rest until after work tomorrow. An easy beginning, I know, but essential to keeping the cake moist. By the way, this recipe is partly based on Delia Smith's Rich Fruit Cake - but I tend to use a different recipe each year and will add as I go along. (One reason for adding it to this blog is so I can see how I made it!) The quantities above are intended for an 8" round or 7" square tin. Though I am making 2 smaller ones from this quantity. The third I'll probably make next week.
